Saskatoon Berry Coffee Ring

cups saskatoons

tablespoons white sugar

package dry yeast

cup warm water

tablespoons white sugar

tablespoons shortening

large egg

cups flour, divided

package cream cheese

tablespoons butter or margarine

cup icing sugar

1

teaspoon vanilla extract

tablespoon milk

 

Instructions

1. Combine saskatoons and 3 tbsp sugar in a saucepan and cook on low heat until boiling, about 4-5 minutes. Set aside to cool.

2. Dissolve yeast in warm water in bowl.

3. Add sugar, shortening, egg, salt, and 1/2  of the flour.

4. Beat at low speed with mixer until smooth.

5. Stir in remaining flour. Place in a greased bowl.

6. Cover and let rise for 1 hour or until doubled in size.

7. Punch down and turn onto a floured surface and knead 4 or 5 times.

8. Roll dough into a 21x7" rectangle.

9. Top with cooled saskatoon filling.

10. Roll up dough jellyroll fashion. Place roll on a large greased baking sheet, seam side down. Shape into a ring.

11. Using kitchen shears, make cuts in the dough, cutting 3/4 of the way through, about 1 inch apart. Turn each piece of dough on its side. Cover ring & let rise for 45 minutes.

12. Bake at 350° F for 20-25 minutes or until golden brown. Remove and cool.

13. Mix cream cheese, butter, icing sugar, vanilla and milk until smooth. Add more milk if necessary.  Drizzle on top of coffee ring.
