Saskatoon Berry Chocolate Rice Pudding

cup chocolate, bits or chocolate bar |
Instructions 1. In a large saucepan, combine all the ingredients except eggs, saskatoons, and chocolate. 2. Bring to a boil over medium-high heat. Reduce heat , cover and simmer until rice is tender, about 30 minutes. 3. While rice is cooking, beat egg whites until stiff; set aside. 4. Beat egg yolks. When rice is cooked, remove pan from heat and remove cinnamon stick. 5. Slowly ladle about 1 cup of the hot milk mixture into the yolks, a little at a time, mixing after each addition. 6. Stir yolk mixture back into remaining hot mixture in saucepan and cook over low heat for about 5 minutes. 7. Pour into serving bowl. 8. Fold in egg whites and saskatoons, cool. 9. Fold in chocolate bits right before serving.
