Lemon-Scent Saskatoon Cake

cups vegetable oil

cups white sugar

large eggs

cups flour

1

teaspoon salt

1

teaspoon lemon zest

teaspoons vanilla extract

2

cups saskatoons

1

cup pecans, chopped

1

teaspoon baking soda

 

Instructions

1. Preheat oven to 350° F.

2. Grease and flour a 10 cup bundt pan.

3. Combine oil and sugar, cream well. Add eggs and beat well.

4. Stir in flour, soda, salt, lemon zest and vanilla, mix well.

5. Fold in saskatoons and chopped pecans.

6. Spoon mixture into prepared pan.

7. Bake for 1 hour. Test after 55 min with a cake tester or piece of spaghetti.

8. Remove from oven when done and turn out onto rack while hot.

9. Let cool, dust with icing sugar and sprinkle with additional grated lemon rind.
