Diabetic Saskatoon or Cherry Clafoulis
2 Tbsp Splenda 2 cups Saskatoon berries or cherries 4 large eggs
1/2 tsp vanilla 1/4 tsp almond extract 1/4 tsp salt 3/4 cup Splenda 3/4 cup flour 1 cup milk 2 Tbsp butter, melted
Instructions
1. Grease a 10 inch deep pie plate with butter. Add 2 Tbsp Splenda to coat the pie plate. When the pie plate is coated, gently add Saskatoon berries to the bottom of the plate.
2. In a separate bowl, mix 4 eggs, 3/4 cup Splenda or to taste, 1/2 tsp vanila, 1/2 tsp almond extract, and 1/4 tsp salt, mixing well.
3. Add 3/4 cup flour, a little at a time. Once that is mixed, add 1 cup milk. Whisk together until well mixed. To this mixture, add 2 Tbsp melted butter and mix well.
4. Pour over Saskatoon berries (or cherries) and place in a heated 350F oven. Bake for 40 - 45 minutes or until golden brown.
Optional - when done and cooled, dust with a little Splenda.
