Saskatoon Rhubarb Pie

cups saskatoons

1

cup rhubarb, chopped

2

tablespoons water

1

tablespoon lemon juice

1

cup white sugar, or less

1 1/2

tablespoons minit tapioca

crust pastry

 

Instructions

1. Place saskatoon berries, rhubarb, water, and lemon juice in a saucepan.

2. Simmer for 10 minutes, do not boil - remove from heat.

3. Add sugar and tapioca - stir and let cool.

4. Place filling in bottom unbaked crust - dot with butter.

5. Cover with top crust, brush lightly with milk and sprinkle with sugar.

6. Bake at 425° for 15 minutes.

7. Reduce heat to 350° and bake 30 minutes more.
