Saskatoon Berry Muffins

cup rolled oats

cup orange juice

1 1/2

cups flour

1/2

cup white sugar

1 1/4

teaspoons baking powder

1/4

teaspoon baking soda

1/2

teaspoon salt

1/2

cup vegetable oil

1

large egg, beaten

1

cup saskatoons

2

tablespoons sugar

1/4

teaspoon cinnamon

 

Instructions

1. Soak rolled oats in orange juice.

2. Beat egg and mix with oil, add to rolled oats.

3. Mix together dry ingredients.

4. Add liquid ingredients  to dry and fold until absorbed.

5. Fold in berries.

6. Spoon into greased or paper lined muffin tins and top with cinnamon sugar.

7. Bake at 375° for 18 minutes.

 

Yield: 12 muffins
